Greenlot Kopi is a specialized post-harvest processing project dedicated exclusively to curating and processing distinct origins across the archipelago of Indonesia.

Operating on the ground in North Sumatra, Indonesia, the project steps away from traditional macro-commodity sourcing to view Indonesia’s diverse volcanic microclimates as a living laboratory for flavor engineering and sensory exploration.

Its core target audience includes both innovative roasters globally who demand exotic profiles, and traditional roasters who demand flawlessly executed classics.

The project is driven by a deliberate pairing of multi-decade international coffee trade experience and advanced agricultural science, led by its two co-founders:

  • Benalla Youssef – A seasoned industry professional with decades of deep-rooted commercial experience in the global coffee trade, overseeing strategic growth, business development, and market positioning.
  • Johan Kwe – An internationally recognized CQI Processing Instructor and agronomist, directing origin labs, fermentation protocols, and quality control.

The Greenlot Kopi project challenges conventional post-harvest boundaries through two core operational pillars to satisfy classic and beyond-experimental coffee processing palates:

  • Mastering Classic Processing Methods Applying strict scientific guardrails to heritage Indonesian methods like Wet-Hulling (Giling Basah) by using climate-controlled drying and closely monitored fermentations to eliminate historical defects while enhancing the body, sweetness, and cup clarity that classic roasters demand.
  • Experimental & Co-Ferment Coffee Designing avant-garde flavor profiles through precise microbiology, controlled anaerobic environments, yeast inoculation, and ( fruits,floral,spices ) co-fermentation that transmute complex aromatic compounds and vibrant fruit notes directly into the coffee seeds
